Favorite Recipe Friday: Thai Chicken Zoodles

I love this recipe for its sauce. Its creamy, salty, tangy, peanutty flavor is delicious! And you get plenty of vegetables with a nice amount of protein in this meal. Can’t beat that!

Ingredients

2 tsp. olive oil, divided
1 lb. of chicken breast, diced
2 zucchini, spiralized
1 large carrot, peeled and julienned
1 red bell pepper, julienned
2 Tbsp fresh cilantro, chopped

Peanut Sauce:

2 garlic cloves, minced
¼ c. peanut butter
2 Tbsp lime juice
¼ c. soy sauce
2 Tbsp fresh cilantro, chopped
½ tsp ground ginger
½ tsp red pepper flakes

Instructions:

  1. In a small bowl, mix together peanut sauce ingredients. Add a little water if the sauce seems too thick. Set aside.
  2. Heat a large skillet over medium high heat and add 1 tsp. oil and chicken. Sauté for approximately 4 minutes or until chicken has been cooked through. Remove chicken from skillet and set aside.
  3. In the same skillet, heat remaining 1 tsp. oil at medium-high. Add carrots, zucchini, and red peppers. Stir fry for 2 minutes.
  4. Put zucchini noodle mixture in a large bowl and add chicken, cilantro and peanut sauce. Toss to coat.
