Here comes another simple recipe!
There was a special on zucchini this week so I decided to get out my spiralizer. The Parmesan cheese makes this dish creamy, and the cherry tomatoes add tang and sweetness. Throw some garlic in there, and it’s a myriad of flavor!
1 Tbsp olive oil
2 garlic cloves, minced
2 medium zucchinis, spiralized
1 pint cherry tomatoes, halved
1 tsp Italian seasoning
1/4 tsp black pepper
1/3 c. Parmesan cheese
- Heat oil in a skillet over medium heat. Add garlic and cook for 1-2 minutes.
- Add the zucchini and tomatoes, stirring occasionally. Cook for about 5 minutes.
- Stir in Italian seasoning, pepper and Parmesan cheese. Heat until cheese has melted.
